Most children love mac & cheese. I certainly do! In this recipe I combine what children love with a little of what they need. Parents always say “eat your vegetables.” This recipe is a sure way to get your children to at least try those veggies. This is a very simple dish and fits in easily with your planned meal. Your children may even want to help make this delicious recipe for dinner! So ask for some help and get them cooking. It’s always a good time to start teaching children how to cook. This has quickly become one of my most requested dishes and I hope you enjoy my creative twist on an old family favorite.
Bacon-spinach mac & cheese
Ingredients:
3 cups uncooked elbow noodles
6-8 oz of spinach (fresh or frozen)
2-3 oz crumbled bacon or bacon pieces
2 Tbsp butter
2 Tbsp flour
2 cups milk
2 cups shredded sharp cheddar cheese 1/4 cup grated Parmesan cheese
Preheat oven to 350.
Prepare noodles according to the package directions, adding spinach and cooking for the last 2-3 minutes. Drain and set aside. Melt butter in a sauce pan and then whisk in the flour. Cook and whisk until mixed well. Add milk and bring it to a boil. Cook 3-5 minutes until milk is thickened. Whisk in Parmesan cheese and 1cup of cheddar cheese and stir until it is all melted. Remove from heat. Combine the cheese mixture with the spinach, noodles, and bacon. Mix it all together and then pour it into a 9x13 baking pan. Top with the remaining cheddar cheese. Bake for about 20 minutes or just until the cheese starts to brown. Enjoy!
