You can whip up flavorful, frugal fare for your family with a little creativity and not a lot of know-how. One of my family's monthly staples is something we call "Ziti con Salsa Aurora." That fancy moniker is a completely made up name for a simple, yet delicious dish we first enjoyed in Florence. The cost for this quick and easy meal that serves four adults (or my family of two adults and three Littles) is around $6. Add some homemade bread and a salad and you have an Italian feast without breaking the bank!

 

Ziti con Salsa Aurora
Prepare one pound of ziti according to box directions. Meanwhile, pour one 28-ounce can of crushed tomatoes into a pot. Add one tablespoon garlic powder and one cup shredded Parmesan cheese. Heat on low to allow cheese to melt, stirring occasionally. Add 4 to 6 ounces of heavy cream. Heat through. Strain ziti and return to pot. Pour sauce over cooked ziti and toss to coat. Serve warm with a bread and salad.
