1 1/ 4 cup unsifted all-purpose flour
1 teaspoon baking soda
1 cup butter soften
1 / 4 cup granulated sugar
3 / 4 cup light brown sugar, firmly packed
1 package (4-serving size) Jello vanilla pudding
3 1 / 2 cups quick-cook rolled oats
1 cup raisins (oprional)
Mix flour with baking soda. Combine butter, sugars and pudding mix in large mixer bowl; beat until smooth and creamy. Beat in eggs.
Gradually add flour mixture; then stir in oats and raisins. Batter will be stiff.
Drop by rounded teaspoon onto ungreased baking sheets, about 2 inches apart. Bake at 375 for 10 to 12 minutes. Yields 5 dozen, From Liza Ashley's book Thirty Years at the Mansion. (Among the governors she worked for was Bill Clinton.) Great book. You can find in on line.
