Apple Mint Jelly

 

Ingredients:

3 cups fresh apple juice

2 cups fresh mint

5 cups sugar

1 / 4 cup apple cider vinegar

1 / 4 cup fresh orange juice

4 ounces liquid pectin

Procedure:

In medium (non aluminum) sauce pan bring apple juice to boil. Add mint. Cover and remove from heat, allow to stand until juice has cooled. Strain and press all flavor from mint. Return to sauce pan, add sugar, vinegar and lemon juice. Bring to boil. When sugar dissolves add pectin. Mix it in well. Return to boil for one minute. Remove from heat and scoop froth for jelly. Pour into (sterilized) decorative jars. Process the jars in hot water bath at least 5 minutes or you can seal them with a thin layer of paraffin.
