Bananas Flamb

As a chef, I have found over the years people love great tasting dishes. As a "celebrity" chef, I have also found people love a show! Bananas with brown sugar on fire? Great taste and show!
6 tablespoons butter
1 tablespoon cinnamon, ground
6 ounces white rum
3 ounces banana liquor
3 / 4 cup brown sugar
6 bananas, peeled and sliced lengthwise
vanilla ice cream
Use fully ripe bananas (yellow skins flecked with small brown spots) for better flavor.

(This recipe yields 6 servings)

Method:
Combine the rum and the banana liquor. Then, gently heat - do not allow to come to a boil.
Melt the butter in a sauté pan and thoroughly blend in the brown sugar. Then add the bananas. Sauté lightly, sprinkle the cinnamon.
Lower the flame and pour the rum and banana liquor mixture over the bananas.
Tilt the pan to ignite, then toss the bananas to make for good show and basting the bananas with the flaming liquid. You can use a long match or lighter to be safe.
Serve over ice cream after the flames have died.
