Bullritos Mexican restaurant had scheduled to open July 25 in Covington, but construction setbacks may push the opening into August, Covington Senior Planner Scott Gaither said.
The fast-food Mexican chain is based in Houston, with 12 locations in Texas and one in Louisiana. Its Covington branch is going to be located across from Walmart at 10327 Industrial Blvd.
Gaither said one of the local franchise owners is originally from Covington, while her husband is from Louisiana, which explains the non-Texas ties. The couple lived in Houston for a while, which is how they got started.
The owners could not be reached for comment. According to the restaurant's website, the store name is inspired by the Spanish tradition of the Running of the Bulls, while the food style is quick and casual or "bag n' go." The chain also has several margarita options.
In the same area, McDonalds is expected to break ground any day at its one-acre parcel at the intersection of Industrial Boulevard and Ga. Highway 142 next to the closed gas station, Gaither said.
Meanwhile, construction continues at both Harristown Park, the senior affordable living center at the corner of Lee and Reynolds streets, and the RaceWay gas station on U.S. Highway 278. The senior complex is expected to open in late 2011, while the RaceWay station could open in early September.
